Working in batches slip the tomato slices into the oil in a motion that pushes them away from you so as not to splatter the oil. Fry each slice until golden, about 4 minutes. Do not overcrowd the pot.

Preheat butter in frying pan, dip tomato in egg mixture and then in dry mixture. Place in heated frying pan and fry until brown and crispy on both sides. Note: Butter can burn easily and may need to be changed if a second batch is made.
