By default you should see the clients own IP address as the source address when it reaches the SMTP relay. As you don't it sounds as if you have a NAT rule set in the firewall that is changing it. Perhaps post your firewall rules to help us diagnose?
My Mikrotik's are replacing two Fortiswitch's that don't support MLAG (or HA for that matter), so most of the 1G ports will be mapped with vlan traffic that matches my current fortiswitch's. The Z9100's are 100G QSFP switches (running their own MCLAG), so I'm thinking of using the QSFP ports on the Mikrotik's SQFP ports, and then using two of the SFP+ ports for MLAG, and then one SFP+ port ...

Allthough macOS PF is pretty okay, the standard interface (i.e., Apple > Settings > Network > Firewall) is pretty much a disaster and pfctl is too cumbersome IMO. I wouldn't cope without Litle Snitch (or LuLu).
