This page of IGN's Super Mario Sunshine wiki contains information for the three basic collectibles you will find in Super Mario Sunshine.
Your goal in Super Mario Sunshine is to gather the Shine Sprites (Shines) and restore the light that shines on Isle Delfino. Collecting Shines is the main way you'll be able to unlock new worlds and upgrades!
There are a total of 120 Shine Sprites in Super Mario Sunshine. You'll only need to collect 50 Shines to "beat the game." Collecting all of them will earn you a different ending and of course, bragging rights. You can check your progress by clicking on the Shine Sprite on the map screen. Below is a breakdown of all the 120 Shines:
•(70) Episode Shines: 10 per area (1 for each Episode and the two Secret Shines in each stage)
•(8) 100-Coin Shines: 1 each for getting 100 Coins in the first 7 stages and in Delfino Plaza.
•(18) Delfino Plaza Shines: 16 Shines are available in Delfino Plaza (Corona Mountain’s Shine counts as a Delfino Plaza Shine). Two more Shines are located at the Airstrip.
•(24) Blue Coin Shines: You can trade in 10 Blue Coins for a Shine in Delfino Plaza.
Gold Coins are usually the most common collectible in the Super Mario franchise. In Super Mario Sunshine, Gold Coins have a variety of uses.
•Each Gold Coin you pick up restores a notch in your life gauge.
•When underwater, Gold Coins restore your breath gauge, helping breath longer underwater.
•When you get 50 Coins, you get an extra life.
Blue Coins are rare coins scattered throughout Isle Delfino and multiple worlds in Super Mario Sunshine. Collecting a Blue Coin does not add to Mario's golden coin amount, but they do heal two heal points. Every Blue Coin you collect allows you to save your game. Collecting all the Blue Coins in each world also earns you a Shine!
