Steve Ells (born September 12, 1966) is an American businessman. He is the founder, former CEO, and former Executive Chairman of Chipotle Mexican Grill. Ells founded Chipotle in 1993, and under his direction, the chain serves what it describes as "naturally raised meat" and promotes sustainable agriculture.
In 1999, while looking for ways to improve the taste of the carnitas, founder Steve Ells was prompted by an article written by Edward Behr to visit Concentrated Animal Feeding Operations (CAFOs). Ells found the CAFOs "horrific", and began sourcing from open-range pork suppliers.
